Big Riv’s Big Beautiful Chicken

Fall is in the air.  And for my family, that means it is time to make Big Riv’s Big Beautiful Chicken!  The kids have been asking for this one for a while now.  With the cooler temps, I decided, why not fire up the oven and get my cooking on today?  I must say, it smells amazing in here!

This is by far my favorite way to roast chicken.  All in all, it doesn’t take too long to prep, which is always a plus in my book.  After just a quick chop and mash for the salt paste, melt some butter and herbs on the stove top for the baste, and you can send your chicken on its way to get happy in the oven.

Tip from this momma of 4 children: If your kids are always fighting over the drumsticks, buy a couple extra, rub them with a little salt paste,  and throw them into the pan for the last hour to roast. Voila- Everyone’s happy!  And you can enjoy that roast chicken and glass of wine in peace!

Why I love this recipe–The chicken cavity is rubbed with an intensely flavorful salt/garlic/fresh herb paste, which permeates flavor and juiciness throughout the entire chicken as it cooks.  The butter herb baste seals the chicken with flavor from the outside, and creates a beautiful, crispy skin.

Pair this chicken with Fluffy Mashed Potatoes, homemade gravy (recipe below), and a green salad, and you’ve got yourself a gorgeous feast any day of the week!  This meal will wow both your eyes and your taste buds.  And as for the story behind the name of this recipe…well, I’ll save that for another day.

Instructions
  1. Preheat the oven to 350 degrees. Remove and discard any giblets found in chicken cavity, then place the chicken breast-down in a large, 3 QT, lightly oiled glass casserole dish.
  2. Chop garlic on a cutting board with a large chef’s knife. Add kosher salt, pepper, crushed bay leaf, fresh herbs, and olive oil, and alternate chopping the mixture and smashing with the side of the chef’s knife blade, until a thick paste forms.
  3. Rub the garlic salt paste inside the chicken cavity, saving a bit to rub around the exterior of the bird as well.
  4. Melt the butter, dried herbs, and pepper in a small pot, and spoon half the mixture over the chicken (it should be breast side down in the pan). Reserve the remaining butter mixture.
  5. Bake the chicken one hour (breast down) on the middle rack of your oven. After 1 hour, flip the chicken so it is breast up (two wooden spoons work well for this), and spread the remaining butter mixture on the top.
  6. Bake another 1/2 hr to 1 hr (depending on the size of the chicken), until the chicken is nicely browned, and the internal temperature is 165 degrees.
  7. Place the big, beautiful chicken on a platter, and let rest for a few minutes, then carve and serve. Pair with fluffy mashed potatoes and gravy, if desired.
  8. To make the gravy: Pour the drippings from the pan into a gravy separator. Skim off and discard all but 2 TBS of grease. Pour the 2 TBS grease into a pot, and whisk in 3 1/2 TBS flour. Heat on medium low heat for a minute or 2 and whisk until it forms a nice thick paste.

  9. Pour the remaining juices into a 2 cup measuring cup, and add unsalted chicken broth or water until you have exactly 2 cups of liquid. Add the liquid to the pot, and whisk on medium high heat until it bubbles and thickens to desired consistency. Serve hot, and pour over chicken and mashed potatoes. Can there ever be too much gravy on your plate? My family doesn't think so! Enjoy!
