When it comes to recipes, Kale Avocado Salad is as simple as they come. With just four ingredients and no chopping necessary, you can have this ready in minutes. But just because it has a short of list of ingredients, does not mean it skimps on taste and nutrition. The avocado and lemon create a rich, creamy dressing that is chock full of Vitamin K, Folate, Vitamin C, Potassium, B vitamins, and Vitamin E–to name a few.
This salad-along with some coconut water and almonds-is my go-to meal after a long run when I am marathon training. I can literally feel my body replenishing while eating this.
