Kale Avocado Salad

When it comes to recipes, Kale Avocado Salad is as simple as they come.  With just four ingredients and no chopping necessary, you can have this ready in minutes.  But just because it has a short of list of ingredients, does not mean it skimps on taste and nutrition.  The avocado and lemon create a rich, creamy dressing that is chock full of Vitamin K, Folate, Vitamin C, Potassium, B vitamins, and Vitamin E–to name a few. Avocado Kale Salad is fresh, clean, and nutritious! Only 4 ingredients!

This salad-along with some coconut water and almonds-is my go-to meal after a long run when I am marathon training.  I can literally feel my body replenishing while eating this.

Kale Avocado Salad

Avocado Kale Salad is fresh, clean, and nutritious! Only 4 ingredients!
Instructions
  1. Add the kale to a salad bowl, and squeeze half the lemon over the kale. Mix, and set aside to allow the acidity to slightly wilt the kale while you make the dressing.
  2. For the dressing, slice and scoop out the flesh of one avocado into a small bowl. Add the olive oil and salt and pepper to taste. Smash with a fork until the avocado mixture becomes a smooth paste.
  3. Add the avocado mixture to the kale, and mix well. Enjoy!
