To me, Swiss Meatloaf Stuffed Portobello Mushrooms are a combination made in heaven. There is just something about mushrooms and Swiss cheese that go perfectly together, like peanut butter and jelly, or peas and carrots (you get the picture!). These stuffed mushrooms literally have it all–juicy portobello mushrooms, delicious, moist, meatloaf filling, and a Swiss cheese cream sauce topping that’s to die for.
Mmm, the sight of gooey, melting cheese makes my mouth water just looking at it. Pair these mushrooms with a green salad, and you’ve got yourself a delicious dinner the cooks up in half an hour. A note about the portobello mushrooms: look for mushrooms that are large enough to fit about a quarter pound burger inside. If you would rather use smaller crimini mushrooms, another option would be to make an entire tray of appetizer size meatloaf stuffed mushrooms (yum!).
These stuffed portobellos pair well with grilled onions on top!
