Swiss Meatloaf Stuffed Portobello Mushrooms

To me, Swiss Meatloaf Stuffed Portobello Mushrooms are a combination made in heaven.  There is just something about mushrooms and Swiss cheese that go perfectly together, like peanut butter and jelly, or peas and carrots (you get the picture!).  These stuffed mushrooms literally have it all–juicy portobello mushrooms, delicious, moist, meatloaf filling, and a Swiss cheese cream sauce topping that’s to die for.

Mmm, the sight of gooey, melting cheese makes my mouth water just looking at it. Pair these mushrooms with a green salad, and you’ve got yourself a delicious dinner the cooks up in half an hour.  A note about the portobello mushrooms: look for mushrooms that are large enough to fit about a quarter pound burger inside.  If you would rather use smaller crimini mushrooms, another option would be to make an entire tray of appetizer size meatloaf stuffed mushrooms (yum!).

Stuffed Portobello Mushroom Swiss Burger. A meatball style patty stuffed in a portobello, topped with a delectable swiss cheese sauce!
Instructions
  1. Preheat the oven to 350 degrees.
  2. Remove the stems from the 4 portobello mushrooms, and place the mushroom caps ridged-side facing up, on an oiled, rimmed cookie tray.
  3. To make the meatloaf filling: In a large bowl, mix the ground beef, grated onion, breadcrumbs, garlic, 1/4 cup milk, egg, salt, and pepper.
  4. Divide the meatloaf mixture into 4 equal patties, and press each patty into a portobello mushroom cap. Press a small impression into the middle of each patty to allow some room for the cheese sauce.
  5. Bake the meatloaf filled mushrooms caps for 15 minutes.
  6. While they are baking, make the cheese sauce. Melt the butter in a small saucepan on medium low heat. Whisk in the flour, and stir until a smooth paste forms. Slowly add the remaining 1 cup milk, stirring continuously until it is fully mixed in. Bring the heat up to medium high, and as soon it starts to bubble, turn the heat down to low, and simmer for a few minutes, stirring frequently, until thickened. Turn off the heat, and remove the saucepan from the burner. Whisk in the 1/2 cup shredded Swiss cheese. Salt and pepper to taste.
  7. When the timer goes off, remove the mushrooms from the oven (leave the oven on), and top each stuffed mushroom with a couple spoonfuls of the cream sauce, then top with a slice of Swiss cheese. Bake the mushrooms for another 15 minutes, or until meat is cooked through, and the cheese has a nice golden color on top.
  8. If you have any left over sauce, serve it alongside the stuffed mushrooms. Enjoy! Note: Sauteed onions make a wonderful garnish!
