Teriyaki Turkey  Meatballs With Coconut Rice have quickly become a family favorite meal in my house.  All four of my kids love this dinner, which in my house, is somewhat of an anomaly.  Now that my kids are getting older, and my oldest is now 14 years old and towering over me at a whopping 6 feet tall (and growing!), I have had to double this recipe from 1 pound to 2 pounds of ground turkey to feed everyone.  The last thing I want is my kids fighting over meatballs!

As you can see, there are plenty for everyone!  And why not let them have seconds?  This recipe is cost efficient, fun to eat, and most importantly-healthy.  As usual with most of my recipes, you can adjust the measurements to fit your own household’s needs, using the handy serving adjuster arrow in the recipe (love that!).    As a rule of thumb, this recipe makes enough to feed a hungry family of 6.  Or, a family of 4 with extra to spare for leftovers the next day.  Asian meatballs for lunch, anyone?

This would also make an exquisite appetizer for a party.  Just hold the rice, and serve a platter of these delicious turkey meatballs alongside a bowl of teriyaki dipping sauce.

Aren’t they beautiful up close?  These turkey meatballs combine the aromatic flavors of cilantro, green onion, ginger, and garlic.  Yum!

And don’t forget the teriyaki sauce!  This unique teriyaki sauce melds the flavors of pineapple juice and coconut milk to make a dipping sauce that is out of this world good.  Well, according to my kids, anyway.

Serve the meatballs over coconut rice (recipe follows), with a salad or stir fried vegetables on the side, if you’d like.  My family likes to pass around a small pitcher full of the teriyaki sauce to pour on top of the meatballs, but you could also serve individual bowls of dipping sauce.

Your choice.  It would be delicious any way!

Instructions
  1. To make the rice: Cook rice according to package directions, in either a rice cooker or stovetop method. When the rice is done, fluff with a fork, and pour in 1/2 can of the coconut milk (reserve the other 1/2 can for the teriyaki sauce). Turn off the heat, and let the rice soak in the coconut milk until ready to serve.
  2. Preheat the oven to 350 degrees. Drizzle some sesame oil onto a rimmed cookie sheet (enough to lightly cover the surface), then brush with a pastry brush until the entire cookie sheet is oiled.
  3. To make the meatballs: Combine ground turkey, eggs, green onion, 1 minced garlic clove, 1 tsp minced ginger, cilantro, yogurt, Panko crumbs, 1 tsp soy sauce, and salt in a large bowl. Mix until incorporated, then roll into about 1 inch balls. Place the meatballs about 2-3 inches apart on the oiled cookie sheet. There should be about 9-12 per sheet.
  4. Bake for 7 minutes, then take the tray out and flip the meatballs, and bake for another 10 minutes.
  5. Transfer the meatballs to a paper towel lined plate. Repeat the process until all meatballs are cooked.
  6. To make the teriyaki sauce: Mix 1/2 cup soy sauce, pineapple juice, and lime juice in a small bowl. Wisk in the corn starch until dissolved.
  7. Drizzle some sesame oil into a saucepan, and heat on medium heat on the stove top. Add the remaining 1 minced garlic clove, and 1 teaspoon minced ginger. Fry for about 1 minute, then pour in the pineapple juice mixture. Turn the heat to high, and stir. Bring to a rolling boil. Once boiling, drop the heat to low, and continue to stir. Simmer for a few minutes until thickened. Add the remaining 1/2 can of coconut milk, and let simmer for another minute. Transfer the teriyaki sauce to a bowl or pitcher.
  8. Serve the meatballs with the coconut rice. You can either pour the teriyaki sauce over the meatballs, or serve the teriyaki sauce on the side as dipping sauce. A salad or stir fried vegetables would make a nice addition to this meal as well. Enjoy!

  • Gorgeous photos! My husband and I have been looking for lighter meals for the new year and this is a perfect way to use all the ground turkey we’ve been storing in the freezer! Did you just use plain yogurt (as opposed to plain greek yogurt)?

    • Thank you! I have really become a fan of ground turkey lately! It’s light, yet so rich and delicious! I use plain yogurt, but I think Greek yogurt would work fine, too.
