This Cucumber Raita is the perfect accompaniment for any Indian dish.  In our house, it is a staple whenever we make curry.  To me, curry and raita go hand-in-hand–like peanut butter and jelly or peas and carrots! You just can’t have one without the other.  I’ve tried a couple different ways to make raita, and this recipe is by far my favorite.  The flavor combination of yogurt, cool cucumber, refreshing lime, and hint of smoky cumin work perfectly together.  Feel free to use any kind of yogurt you’d like.  I prefer whole milk yogurt for the added creaminess, but non-fat would work fine, too. To make a fruity raita, you can omit the cilantro and cucumber and add 2 TBS currants and 1 cup mango instead (I tend to favor savory dishes, so I’ve never tried the fruity version, but I’ve heard its good, too).

Instructions
  1. Combine all ingredients in a bowl. Mix well, and chill until ready to eat. Use as side dish for spicy curries, a sauce on top of meats, or as a dip.
